Serve 2
  • 4 beets

  • 2 tbsp olive oil

  • 1 tsp Himalayan salt

Preheat oven to 425. Peel beets and slice into 1/2 inch rounds. Toss in olive oil and salt. Bake for 35 minutes or until browned and crunchy.
Tip - wear gloves when peeling beets to avoid staining fingers
