2 tbsp unsalted peanut butter (go w/ natural, the only ingredient should be peanuts)
2 tbsp warm water
2 tbsp green onion
½ tsp crushed red pepper flakes (optional)
Mix all chicken marinade ingredients together (everything in above list, except chicken) in medium sized container w/ lid. Add chicken to container, shake to cover chicken, and put in refrigerator to marinate. Marinate for 30 minutes or for best results a day or night. Place individual chicken tenderloin on skewer and cook on grill or brown if a pan in grill is not available. While chicken is cooking prepare peanut sauce by chopping green onion and mixing together with peanut butter and water.
- If peanut sauce is too thick, add more water.
- Prep chicken, marinate before or after work and let marinate for several hours.
- To make this into a meal and add additional fiber, serve over greens or place chicken, greens, and chopped veggies in wrap and dip in peanut sauce.
