4 oz light, whipped cream cheese
2 oz low sodium cheddar cheese
10 small jalapenos
2 large egg whites
¾ cup cornmeal
Preheat oven to 450 F. Cut peppers in half and remove seeds. In medium bowl combine cream cheese and cheddar and fill jalapenos. Beat egg, dip each popper in egg, then toss in cornmeal. Brush pan with coconut oil and place the cheese side up on a nonstick baking sheet. Bake for 15 minutes or until golden brown.
