Spicy Bok Choy Soup
Serves: 6
Prep time: 10 minutes
Cook time: 20 minutes
Ingredients:
4 ounces buckwheat noodles
4 cups low sodium vegetable broth
12 ounces extra firm organic tofu (cubed)
½ pound bok choy (chopped)
½ bunch watercress
4 scallions (chopped)
2 tbsp light soy sauce
1 tsp sesame oil
½ tsp crushed red pepper
1 tbsp dried ginger
Directions:
Bring broth to boil add all other ingredients and cook until noodles are done.
