Pad Thai Noodles

Pad Thai is probably the best-known of all Thai noodle dishes and only takes 5 minutes to cook. It’s super easy and loaded with veggies.

Serves: 4

Ingredients:
- 2 tbsp sunflower oil
- 3 beaten eggs (can omit)
- 6 oz of thick brown rice noodles (cooked)
- 3 cups of kale (chopped)
- 2 limes (juiced)
- 1/4 cup sweet chili sauce
- 1/4 cup Bragg’s Amino Acid
- 1 cup carrots (grated)
- 1 cup bean sprouts

Topping:
- 1/3 cup peanuts (chopped)
- 4 scallions (sliced)
- 1/4 cup cilantro (chopped)

Heat oil, add eggs and noodles and stir-fry for about 2 minutes. Add the remaining ingredients and stir-fry for 5 minutes. Top with peanuts, scallions, and cilantro.
