Serves 2
Veggie or Meat Bolognese Sauce over Brown Rice Pasta
Bolognese:
8 oz tofu or extra lean beef
8 oz stewed tomatoes
2 carrots (pealed and cut into small pieces)
1 chopped white onion
2 tbsp olive oil
salt/pepper/italian seasoning
Brown onion in olive oil, add meat or tofu and brown. Stir in stewed tomatoes, turn down heat, and cook for 20 mins. Season with sea salt, pepper, and dried italian seasoning.
Cook brown rice pasta according to directions (or sub spaghetti squash if you dont feel like having carbs). Top pasta with sauce, sprinkle with parm and crushed red pepper.
Remember portion control is key.
