Fish Tacos (serves 2)
- 8 oz of sustainable, white fish (get the Monterey Bay Seafood Watch Guide app)
- 4 corn tortillas
- 1/2 cup Organic Mango Salsa
- 1 cup Organic Arugula
- 2 tbsp Organic Cilantro
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 4 lime wedges
- Salt/Pepper
- 1 tsp Olive Oil
- Hot Sauce (if you wish)
Sprinkle frying pan with olive oil, heat up, then add fish. Sauté until cooked, remove from heat and add seasons and cilantro. To serve, fill tortillas with arugula, salsa, hot sauce, and squeezed lime wedge.
