Honey Garlic Pork Chops w/ Maple Mashed Sweet Potatoes and Sesame Green Beans

Prep Time: 10 minutes, Cook Time: 20 minutes
Yields: 4 Servings

Honey Garlic Pork Chops:
4–6 oz boneless pork loin chops (¾” thick)
1 tbsp garlic powder
1 tsp black pepper
2 tbsp honey
1 tbsp olive oil

Maple Mashed Sweet Potatoes:
3 medium sweet potatoes, peeled and diced
½ cup 1% milk
1 tbsp unsalted butter
2 tbsp maple syrup

Sesame Green Beans:
12 oz fresh whole green beans, washed and with ends removed
¼ cup water
1 tsp sesame oil
1 tbsp black sesame seeds

Directions:

In medium pot, cover diced sweet potatoes with water. Bring to boil; then reduce heat and cook sweet potatoes for 5–7 minutes (or until soft). Drain, put in food processor with remainder of ingredients and blend until smooth. Put back in pot to keep mashed sweet potatoes warm.

In a sauté pan, cover green beans with water and cook for 10 minutes or until thoroughly cooked. Drain water and toss in sesame oil and seeds.

Preheat oven to 375°F. While oven is heating, heat oil in large non-stick frying pan for 1 minute over medium-high heat. Add pork chops and cook each side until browned (about 3–5 minutes per side). Next, brush pork chops with honey on both sides and then season. Place pork chops in oven-safe dish in preheated oven for 6–9 minutes (or until thoroughly cooked). To see if the pork chops are done, cut a small slit in middle of each chop. It should be white or just a little pink. IMPORTANT NOTE: Do not overcook.

To serve, place ½ cup of mashed sweet potatoes on each of 4 plates; top with one pork chop per plate. Add 1 cup of green beans per plate and enjoy.
