Meatless Monday — Go Greek GL Spicy Pasta

This pasta is high in fiber, antioxidants, protein and is gluten-free. Go all organic!

Serving Size – 3

Ingredients:
- 3 cups brown rice penne (cooked)
- 1/2 cup green peppers
- 1 cup sundried tomatoes (oil drained well and tomatoes chopped)
- 1 cup fresh spinach (chopped)
- 1/4 cup hummus
- 1/2 cup scallions (chopped)
- 1/4 cup low fat feta
- 1/3 cup black olives (chopped)
- 1/4 cup fresh basil (chopped)
- 2 tsp toasted pine nuts
- 3 tbsp lemon juice
- 1 tsp sea salt
- 1/2 tsp crushed red pepper

Cook pasta according to directions. Rinse in cold water. Toss in all ingredients and refrigerate to chill.
