Arugula Salad w/ Orange Sesame Dressing

This salad is loaded with antioxidants, colors, and bursts with favor. Its the perfect meal or side dish. Simple and refreshing.

Prep time: 10 minutes

Ingredients:

Salad:

  • 3 cups arugula
  • 1 cup sliced strawberries
  • 3/4 cup chickpeas (purchased from bulk and cooked)
  • 1 medium red onion (sautéed 1 tbsp olive oil)

Dressing:

  • 1/2 cup orange juice (fresh squeezed is best)
  • 1 tbsp light soy sauce (or bragg’s)
  • 1 tsp sesame oil

Directions:

Whisk together all dressing ingredients and toss in salad. Enjoy.
