Apple Cashew Muffins

Yields: 12 muffins

1 1/2 cup whole wheat flour (buy from bulk section!)
2 tsp baking powder
1 tsp baking soda
1 teaspoon cinnamon
1/2 teaspoon clove
1/4 tsp sea salt
1/2 cup low fat organic greek yogurt
1/4 cup low fat organic milk
3 tbsp sunflower oil
4 tbsp brown sugar
1 organic egg
1 organic apple (peels and finely chopped)
1/2 cup cashews (chopped)

 

Preheat over to 400. Coat a 12 cup muffin pan with olive oil cooking spray. In a medium sized mixing bowl, combine flour, baking powder, baking soda, cinnamon, clover, and salt. In another bowl, combine greek yogurt, milk, oil, brown sugar, and egg. Stir in flour mix and apples and cashews. Evenly divide into muffin pans and bake for 12 minutes.

Cranberry Sauce

Quick, easy, and you’ll never buy premade cranberry sauce again.

4 cups raw cranberries
1/4 cup agave nectar
Juice from 1 orange
1/4 cup water
1 pitch of clove seasoning

Rinse and clean berries. Put all ingredients in large pot and bring to boil. Reduce heat, cover, and gently boil until berries pop (about 10 minutes). Chill for 1 hour.

Ingredients:

Chicken Lollipops
1 pound organic chicken tenderloins (about 8 pieces)
1/2 cup orange juice
1 tsp organic, light soy sauce
1 tsp toasted sesame oil
1 tsp fresh ginger (zested)
2 cloves garlic (minced)

Peanut Sauce
2 tbsp organic peanut butter
2 tbsp warm water
2 tbsp green onion
½ tsp crushed red pepper flakes (optional)
