Basil-Arugula Pesto

Basil-Arugula Pesto
Ingredients:

1 cup basil
1 cup arugula
3 tbsp pine nuts (roasted)
2 tbsp veggie broth
2 garlic choves
¼ tsp sea salt
½ cup parm cheese (grated)
Juice of ½ lemon

Directions:

Combine all ingredients in food processor and puree.

3 Ways to Use:

1)   Top over grilled fish or chicken

2)   Use as spread on sandwich

3)   Dollop in tomato soup

Tip: Want it to stay green? Plunge basil and arugula in boiling water for 1 minute, then run until cold water.

15 Minute Workout for Busy People

Get more bang for your workout and sculpt all over. Do all 5 moves for 1 minute each back-to-back, rest for 1 minute, and repeat cycle.

Want more? After completing the workout, go for a 20 minute interval walk or jog.

Dumbbell Plank

Get into a plank position with each hand gripping a dumbbell. Hold for 60 seconds.

Squat and Press

Stand with feet shoulder-width apart and with a pair of 8 pound dumbbells in between feet. Squat down, pick up dumbbells, and press weights overhead.

Jalapeno Poppers

Jalapeno Poppers

4 oz organic cream cheese
2 oz organic cheddar
12 small jalapenos
1 large egg
¾ cup cornmeal

Heat oven to 450. Cut peppers in 1/2 and remove seeds. In medium bowl combine cream cheese and cheddar and fill all jalapenos. Beat egg, dip each popper and then toss in cornmeal. Place the cheese side up on a nonstick baking sheet. Bake for 15 minutes or until golden brown.

Tip – wear gloves when cutting jalapenos to avoid irritating your skin

Sundried Tomato Chimichurri Sauce

Sundried Tomato Chimichurri Sauce

Ingredients:
½ cup parsley
½ cup cilantro
1/3 cup basil
1 tbsp olive oil
1 tbsp red wine vinegar
1 pickled jalapeno

Directions:

Put all ingredients in blender.

Serving Suggestions:
Use as a dip for grilled tofu or chicken. Toss in brown rice or quinoa w/ your favorite greens. Use as a dressing.
