Strawberry Shortcake Smoothie

Boost your immune system with this antioxidant rich smoothie.

Ingredients:

1 1/2 cups almond milk
1 tsp goji berries
1 cup strawberries
1 tsp cinnamon
1 tbsp vanilla extract
1 tbsp agave nectar
1/2 cup low fat greek yogurt
4 ice cubes (use more ice for thicker texture)

Directions:

Remove steams of strawberries. Put all ingredients in blender and process until thick and frothy. Pour smoothie into glass or take it to go. Enjoy immediately after blending.

Spinach Roasted Red Pepper, Goat Cheese and Walnut Salad with Mint Sesame Dressing

Prep Time: 20 Minutes
Yields: 4 Servings

Ingredients:

* use all organic ingredients

6 cups fresh spinach2 roasted red peppers, sliced lengthwise (no salt added, store-bought)
4 oz goat cheese
4 tbsp chopped walnuts (0 mg sodium; no added salt)
1 tsp flax seed


Dressing:

½ cup orange juice
1 tbsp sesame oil
1 tbsp Dijon mustard
1 tbsp fresh mint, chopped


Directions:

Divide spinach evenly and place onto four plates. Top with evenly divided sliced red pepper, goat cheese, walnuts and flax seed.

Whisk all dressing ingredients together and drizzle over salad.
