Creamy Artichoke Pesto & Spicy White Bean-Roasted Red Pepper Dips

Prep Time: 20 minutes
Cook Time: 10 minutes
Yields: 4 servings

Ingredients

* use all organic ingredients

Whole wheat baguette (cut into 2″ slices)

Creamy Artichoke Pesto Dip:
1–8 oz bag frozen artichoke hearts (defrosted)
1 cup basil
1 clove garlic
2 tbsp pine nuts
1 tbsp garlic powder
1 tbsp fresh lime juice
¼ cup fat free sour cream
1 tsp sea salt

Basil Cream Artichoke Chicken

*Use all organic ingredients

Serves 4

1 lbs chicken breast
1 large onion, chopped
1 can artichokes, drained
1 (28 ounce) canned diced tomatoes
1 cup fresh basil, chopped
¾ cup 1% milk
1 tbsp butter

Preheat oven to 425. Melt butter and saute onion in large skillet. Add chicken and brown on both sides, but do not cook through. In baking dish add all remaining ingredients –except basil– and bake for 30-40 minutes. Top with basil.

Suggestion: Serve over spaghetti squash tossed with garlic, a dash of sea salt, and pepper.
