Naked Nutrition’s Hot Plate of the Week
Spelt Pasta with Garden Fresh Veggies:
Serving = 2
- 2 cups of cooked spelt pasta
- 2 large chopped tomatoes (can you buy them locally?)
- 2 cloves of garlic
- 1 medium onion
- 1 medium zucchini
- 1/4 cup of low fat feta cheese
- fresh basil
- salt/pepper
Prepare pasta and set aside. Saute onion and garlic, add zucchini (cook until browned), add tomatoes and take off heat. Mix in pasta. To serve sprinkle with fresh basil and low fat feta cheese. Enjoy!
